Reckoning day after Super Bowl

Good evening everyone!!! I had a really nice weekend, Friday night hubby and I had a nice pork chop salad and some wine and watched Top Chef, Saturday while he did homework I went over to my folks and did laundry and hung out with my Mom and Sadie dog (my Dad was out of town visiting his brother) My Mom and I had some nice conversations, I told her more about our dreams for getting a house and once we have a house getting a puppy and eventually having babies. My Mom is such a neat person, you guys would really like her. She and my Dad are doing the FT, she has lost 2 lbs and my Dad has lost 15 lbs :) My Mom doesn't really need to lose much her goals are similar to mine she wants to slim down and tone up. We have very similar bodies.

Today was my weigh in day that's counts and thankfully it was better than I expected, 135.5 lbs this week compared to 133 last Sunday, but during the week I was between 135-137 lbs. So all in all I gained back 2 lbs of the 3 lbs I lost after the holidays...but I am looking at it as  a glass half full kinda thing rather than glass half empty. What I could have done better was eaten less carbs Superbowl Sunday because I drank red wine and ate chips and dip (I know I ate more than a serving of chips and a serving of wine) and during the week I polished off a bag of chips without thinking. I think the morale of my story is it is important to pay attention to portion size of high carb things like chips especially since they slide down so easily, I think that is a big reason I try not to keep them around. it's way to easy to eat too many before you realize what you have done. And chose between drinking red wine or eating chips or other carbs, not both at the same time.

As I said in my last post I am back on track and I am getting enough fiber in, my #2 problem is also back on track. Hubby and I have been eating a lot of flax seed muffin/bread things things that I first saw in Minichick's blog. We have been taking 1/4 c ground flax meal, 1 egg, 1/4 tsp baking powder, a small amount of melted coconut oil or butter, mixing everything in a dish and then using a spatula to spread it onto a salad plate and baking it for 2 mins. the result is a delicious flat piece of flax bread that I have been using for breakfast or snack. Sometime this week I will try to share pictures.

  1. I can't wait to try the flax muffins. I should get my flour tomorrow from Netrition! Yay!
    You will have so much fun if you get your house. TJ has a lot of fun things that you can buy inexpensively to jazz it up. You know what is funny, I was at the Valley TJ today at about 3:30. I wonder if we would recognize each other?

    1. I think I would of recognized you!!!! I wasn't there until 5:30 because I was taking a nap on the couch at 3:30. I hope you have a wonderful time with your daughter on her visit :)

  2. Your mom sounds really nice. I think it was nice that you got some Mom/daughter alone time. I'll bet she loved it! Glad your weight wasn't as bad as you thought and you found the source of the problem so you won't repeat. I mess up with chips when I go to Chilies restaurant and get the chips and salsa. I can't seem to resist those! Luckily we don't go there that often. I'm always looking for ways to get in more fiber. How do those flax seed flat breads taste?

    1. I like the flax seed bread things a lot, in the moring I put my eggs on them with cheese and avos, as a snack I put peanut butter or almond butter, and I was thinking they would be good as a sandwich as well.

  3. Scratching my head trying to remember what flaxseed bread you're talking about. Is that the microwave flaxseed bread that you bake in a coffee cup that I had posted on my previous blog? If so, you're just spreading it out and baking it as a type of flatbread? Or, maybe you're thinking of Amber's flaxseed flatbread recipe?

  4. I'm wonder if most women go up and down a few lbs one way or another...all the time?
    It's great that you have such a good relationship with your Mom-I'm sure she loves that.
    Yes, those flaxseed 'breads'are good. I cook mine like a pancake-super fast.

  5. Most of us women DO go up and down in our weight a couple lbs. Its no big deal. I know it feels so good to have your family involved in the BFC with you and they are doing great. I love the flax muffins too.

  6. I think probably we all go up and down all the time, at least I do! And you are right about the high carb items - that's where we get in troubles if not paying attention. I know your pounds will come off soon!

  7. I make those flax muffins w some truvia and cinnamon, mix all in a mug and microwave 1 min. I got that recipe on Wheat Belly. I put some cream cheese and Natures Hollow on top! Yum! Glad the weight is stabilizing and you got girl time w your mom!
