Spiced Butternut Squash & Coconut Soup

Hello friends dinner tonight was so good and easy because I made butternut squash soup last night. I have to share the recipe Spiced Butternut Squash & Coconut Soup from: Easy Soups. I modified it for the bfc and ft by taking out carrot, brown sugar and reducing a whole onion to a half.

Modified for Bfc & FT
Butter or olive oil
1/2 yellow onion                                        
2-3 garlic cloves
1 roased butternut squash
1/2 tsp cumin
1 tsp curry
2-3c veg stock
juice of whole lime
1/2c coconut milk
green onion and sour cream garnish.
S&P

Sauteed the garlic and onion, and added the spices, veg stock & squash, simmer, puree in food processor. Pour soup back into the pot and add the coconut milk and lime, season to taste. Delish.

  4. Looks great! People are ALWAYS asking for BFC and FT soups. This looks wonderful! Thank you for sharing, it could be great option for Thanksgiving day.
