Just pluggin away on the FT

Hello friends, I love it when the work week flys by. I have been having lots of fun in the kitchen. Yesterday I made the coconut pumpkin muffins, which are very tasty but need to be tweeked for my taste because I want a stronger pumpkin taste. I made lemon coconut bread on Monday but instead of lemon extract I accidentally put in maple (it was early in the morning and the bottles are similar) surprisingly  they didn't taste too bad and we ate them. I made two soups this week. a modified la ribollita from my book Easy Soups. With napa cabbage, zucchini, celery, little carrot, veg stock, garlic, onion, sage, rosemary, and thyme, and tomato paste....delish. It was perfect to come home last night and make reheat some soup. For tonights dinner I made spiced butternut squash and  coconut soup with roasted butternut squash, onion, garlic, veg stock, cumin, curry, lime, cilantro & coconut milk. I had to check if butternut squash is ft friendly and thankfully it is on the super carb list on pg 160.

I really think the ft is working well for myself and hubby. I don't feel deprived not eating grain carbs since there are so many alternatives. This morning I am eating a flax muffin with almond butter for breakfast. 1/4c ground flax, oil or butter I used 1 tsp coconut oil, 1/2 tsp baking powder, 1 egg microwave for 2 mins. I don't know the exact origins of this recipe but I saw it on minichicks blog several months ago.

  1. I will have to try out that flax muffin recipe! It has similar ingredients to the flax bread I make, but much quicker!

    I made butternut squash earlier this week, but I think I ate too much of it! It is so yummy roasted, and no one else really liked it, so I just kept serving myself more. Bad. Your soups sound so yummy!

  2. Your soups sound so good. I just made the pumpkin muffins too and think they could use something, but I'm not sure what yet. I think I will have to eat a couple more to decide. LOL.

  4. Katie, the soups sound delish and I was just thinking that I should make some. I am gonna try the muffins this weekend. I love the coconut breads just wished I knew how to cook a little better to do some tweaking of my own lol. Have a super weekend!

  5. I'm glad to know that butternut squash is on the list - I love roasted butternut squash soup! I wanted to tell you that I tried your almond flour biscuits and they came out really well. I had them with some sausage Kale soup I made and even had the leftover biscuit for breakfast with some cream cheese butter on top.
